Delightfully fluffy cupcakes bursting with fresh peach and cream cheese flavor, perfect for summer celebrations.

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh peaches, diced
  • 1/4 cup honey
  • 2 cups frosting (cream cheese or buttercream)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Cream together the softened butter, sugar, and cream cheese until smooth.
  3. Add in the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Mix together the flour, baking powder, and salt in another bowl.
  5. Combine the dry ingredients with the wet mixture, stirring gently.
  6. Fold in the diced peaches.
  7. Fill the cupcake liners about 2/3 full and bake for 18-20 minutes.
  8. Cool completely before frosting with your favorite frosting and drizzling with honey.

Use ripe peaches for the best flavor; they add sweetness and juiciness. Store leftovers in an airtight container for 2-3 days at room temperature or refrigerate for up to a week.
