A delicious and vibrant blend of cranberries and oranges baked into a moist bread, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup orange juice
  • 1 tablespoon grated orange zest
  • 1 1/2 cups fresh cranberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together the flour, sugar, baking powder, and salt.
  3. Mix the melted butter, egg, orange juice, and grated orange zest until blended.
  4. Combine the wet and dry ingredients, mixing until just incorporated.
  5. Fold in the fresh cranberries until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 55-65 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For best results, use fresh cranberries. You can substitute with dried cranberries but adjust sugar accordingly.
