Delightful cookies packed with oats, chocolate chips, coconut, and nuts, perfect for sharing and bringing joy to any gathering.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1 cup chocolate chips
  • 1 cup shredded coconut
  • 1 cup chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, and salt; gradually blend into the creamed mixture.
  5. Stir in the oats, chocolate chips, coconut, and nuts until evenly combined.
  6. Drop the dough by rounded spoonfuls onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until the edges are light golden brown.
  8. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

For chewier cookies, slightly underbake them and allow them to cool on the baking sheet. Store in an airtight container at room temperature for up to a week or freeze for up to three months.
