A vibrant and flavorful medley of black beans, corn, fresh vegetables, and zesty lime dressing, perfect as an appetizer or side dish.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper (any color)
  • 1 jalapeño, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Gather your ingredients.
  2. Rinse and drain the beans & corn in a colander.
  3. Chop the tomatoes, red onion, bell pepper, and jalapeño into small, uniform pieces.
  4. Combine the rinsed black beans, drained corn, diced tomatoes, red onion, bell pepper, jalapeño, and freshly chopped cilantro in a large bowl.
  5. Whisk together the lime juice, olive oil, salt, and pepper in a separate small bowl.
  6. Dress the salad by pouring the lime dressing over the bean mixture and gently tossing to combine.
  7. Chill and let it marinate in the refrigerator for at least 30 minutes.
  8. Serve with tortilla chips or as a side dish.

Notes

Adjust the spiciness by adding more or less jalapeño. Store leftovers in an airtight container for up to 3 days.
