A vibrant, zesty bean salad that brings friends and family together with fresh veggies and a limey dressing.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Combine the black beans, corn, diced bell pepper, halved cherry tomatoes, diced red onion, diced avocado, and chopped cilantro in a large bowl.
  2. Whisk together the lime juice, cumin, salt, and pepper in a small bowl.
  3. Pour the lime dressing over the bean mixture and toss gently to combine.
  4. Serve chilled or at room temperature, ideally with tortilla chips.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Toss avocado with lime juice before serving to prevent browning.
