Country French Garlic Soup

A cozy and creamy garlic soup that warms the soul, perfect for cold evenings.

Ingredients

  • 1 head garlic
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme
  • Salt and pepper to taste
  • Chives for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap the garlic head in foil and roast it for about 30 minutes, or until tender and fragrant.
  2. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Squeeze the roasted garlic cloves into the pot, discarding the skins. Add the heavy cream and fresh thyme, then blend until smooth and creamy.
  5. Season with salt and pepper to taste. Serve hot, garnished with chopped chives.

Notes

This soup pairs beautifully with a side salad or crusty French bread. Can be made vegan by substituting cream with coconut cream.
