A gooey, cheesy breakfast bake that’s nourishing and perfect for any meal of the day.

  • 4 large eggs
  • 2 cups cottage cheese
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup chopped bell peppers
  • 1/4 cup chopped onions
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, crack the eggs and whisk them until they’re well combined.
  3. Stir in the two cups of cottage cheese until well combined.
  4. Add your shredded cheese into the bowl, ensuring it’s evenly distributed.
  5. Toss in the spinach, making sure it’s fully thawed and drained if using frozen.
  6. Stir in the chopped bell peppers and onions.
  7. Add salt and pepper to taste.
  8. Lightly grease a baking dish with olive oil or cooking spray.
  9. Pour the mixture into the greased baking dish and spread it evenly.
  10. Slide the dish into the preheated oven and bake for 30-35 minutes.
  11. Once out of the oven, let it cool for a few minutes before slicing it into squares.
