  • 2 cups cottage cheese
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup diced bell peppers
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Whisk together the eggs, salt, pepper, garlic powder, and onion powder until uniform and frothy.
  3. Stir in the cottage cheese, shredded cheese, spinach, and diced bell peppers until well combined.
  4. Grease a baking dish with olive oil if desired.
