A simple, delicious crustless quiche packed with protein and customizable with your favorite vegetables.

Ingredients

  • 6 large eggs
  • 1 cup whole milk cottage cheese
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1 cup chopped vegetables (e.g., spinach, bell peppers, onions)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the eggs, cottage cheese, salt, pepper, garlic powder, and paprika (if using) until fluffy and smooth.
  3. Stir in the shredded cheese and chopped vegetables.
  4. Pour the mixture into a greased 9-inch pie dish or quiche pan.
  5. Bake for 30-35 minutes or until the center is set and the top is lightly golden.
  6. Allow to cool for a few minutes before slicing and serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze individual slices for up to 2 months.
