Delicious cookie cups filled with a rich cookies-and-cream filling, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed Oreo cookies
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin to ensure your cookie cups release easily after baking.
  2. In a bowl, mix together the flour, cocoa powder, sugar, brown sugar, baking soda, and salt.
  3. Cream the softened butter with the sugar mixture. Add the egg and vanilla extract, mixing well until smooth.
  4. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  5. Fold in the crushed Oreo cookies until evenly distributed.
  6. Spoon the cookie dough into the muffin tin, filling each cup about two-thirds full.
  7. Bake in the preheated oven for 12-15 minutes until set. Allow them to cool.
  8. In a separate bowl, beat together the cream cheese and powdered sugar until smooth, then fold in the whipped cream.
  9. Fill each cooled cookie cup generously with the cookies and cream filling.
  10. Serve your cookie cups chilled or at room temperature.

Notes

Store in an airtight container in the fridge for up to 3 days. For freezing, unfilled cookie cups can be thawed and filled later.
