1 cup mini chocolate chips
2 cups semi-sweet chocolate chips OR candy melts
1 tbsp coconut oil (optional, for smoother coating)
Instructions
Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan. In a bowl, whisk together the melted butter and granulated sugar until combined. Add in the eggs and vanilla, mixing until smooth. Then, stir in the cocoa powder, flour, baking powder, and salt until just combined. Spread the brownie mixture into the prepared pan and bake for 20–25 minutes or until a toothpick inserted into the center shows moist crumbs. Once done, allow the brownies to cool completely.
In a medium bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the milk and vanilla, mixing well. Gradually mix in the heat-treated flour until incorporated, then fold in the mini chocolate chips. Roll the mixture into 1-inch balls and refrigerate until firm.
Cut the cooled brownies into squares slightly larger than the cookie dough balls. Using your palm, flatten a brownie square and place a cookie dough ball in the center. Wrap the brownie around the cookie dough, sealing the edges carefully.
In a microwave-safe bowl, melt the chocolate chips or candy melts along with coconut oil in 30-second bursts, stirring in between each until smooth. Dip each brownie bite into the melted chocolate, allowing the excess to drip off. Place them on a parchment-lined tray. Feel free to drizzle with white chocolate, sprinkle with festive toppings, or toss on a pinch of sea salt for an extra touch.
Refrigerate the brownie bites for 15 minutes until the chocolate is set. You can serve them chilled or at room temperature—either way, you’re in for a heavenly treat!
