Delicious cookie butter blondies with a rich, gooey texture, reminiscent of childhood cookies, perfect for any dessert table.

  • 1 cup cookie butter
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Mix together the melted butter and cookie butter until smooth.
  3. Add the brown sugar and stir well.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in chocolate chips if desired.
  8. Pour the batter into the prepared baking pan and smooth the top.
  9. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  10. Let cool before cutting into squares and serving.
