A creamy, dreamy coconut pudding that blends tropical flavors with a comforting texture, topped with crunchy toasted coconut.

Ingredients

  • 2 cups coconut milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup toasted coconut (for topping)

Instructions

  1. Combine the coconut milk, sugar, cornstarch, vanilla extract, and salt in a saucepan. Whisk until smooth.
  2. Cook over medium heat, stirring constantly until thickened, approximately 10 minutes.
  3. Remove from heat and let cool slightly. The pudding will continue to thicken as it cools.
  4. Pour the mixture into serving bowls or cups.
  5. Chill in the refrigerator for at least 2 hours or until set.
  6. Garnish with toasted coconut before serving.

Notes

For added flavor, consider using coconut extract or infusing with lime zest.
