Deliciously chewy coconut macaroons that are simple to make and filled with sweet nostalgia.

  • 2 2/3 cups shredded coconut
  • 2/3 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 egg whites
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine the shredded coconut, sweetened condensed milk, and vanilla extract in a large bowl.
  3. Whip the egg whites with salt until stiff peaks form.
  4. Fold the whipped egg whites into the coconut mixture carefully.
  5. Scoop small mounds of the mixture onto a lined baking sheet.
  6. Bake for 15-20 minutes until golden brown.
  7. Cool on the baking sheet for a few minutes before transferring to a plate.

Notes

For added flavor, consider drizzling melted chocolate over the macaroons or incorporating different flavors like almond extract.
