Delightful lemon bars with a buttery crust and tangy lemon filling, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, powdered sugar, and softened butter until crumbly.
  3. Press the mixture firmly into the bottom of a greased 8×8 inch baking dish.
  4. Bake the crust for 15 minutes until lightly golden.
  5. Whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt.
  6. Pour the lemon mixture over the baked crust.
  7. Return to the oven and bake for another 20 minutes until filling is set.
  8. Cool completely, then dust with powdered sugar.
  9. Slice into bars and enjoy!
