A comforting and moist cornbread recipe that pairs perfectly with chili or can be enjoyed on its own with butter.

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the milk, vegetable oil, and eggs until frothy in another bowl.
  4. Combine the wet and dry ingredients, stirring gently.
  5. Pour the batter into a greased baking dish or cast iron skillet.
  6. Bake in the preheated oven for 20-25 minutes.
  7. Cool for a few minutes before serving.

Notes

For added flavor, consider mixing in jalapeños or cheese. Store leftovers in an airtight container.
