Ingredients

  • 2 cups cooked, shredded chicken
  • 1 package (9 ounces) cheese tortellini
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers invitingly.
  2. Add the diced carrots and celery, and sauté until softened, about 5 minutes.
  3. Stir in the chicken broth along with the dried thyme and basil.
  4. Bring the broth to a vigorous boil.
  5. Add the cheese tortellini and cook according to the package instructions, about 3-5 minutes.
  6. Introduce the cooked chicken to the pot, and season with salt and pepper.
  7. Let it simmer for a few minutes until everything is heated through, then serve warm.
