A heartwarming classic apple pie with a flaky crust and a perfect balance of sweet and tart apples, spiced just right with cinnamon and nutmeg.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 6 to 8 apples (Granny Smith or other tart varieties), peeled, cored, and sliced
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons butter
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix the flour, salt, and sugar in a large bowl. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Stir in the ice water, a tablespoon at a time, until the dough forms a ball. Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 4 hours.
  4. Toss the sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice.
  5. Roll out one half of the dough to fit your pie dish and fill it with the apple mixture. Dot with butter.
  6. Cover the pie with the second half of the dough, sealing the edges and cutting vents in the top crust.
  7. Brush the top crust with the beaten egg.
  8. Bake for 15 minutes, then reduce the heat to 350°F (175°C) and continue baking for 35-45 minutes.

Notes

Always use chilled ingredients to ensure a flaky crust. Let the pie cool for at least an hour before slicing to maintain its shape.
