Irresistibly fluffy muffins coated in sweet cinnamon sugar, perfect for breakfast or dessert.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin nicely.
  2. Whisk together the flour, granulated sugar, baking powder, salt, and cinnamon in a mixing bowl.
  3. Combine the melted butter, egg, milk, and vanilla extract in another bowl and whisk until smooth.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fill each muffin cup about 2/3 full with batter.
  6. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
  7. Prepare the cinnamon-sugar coating while muffins cool slightly.
  8. Brush the tops with melted butter and dip them into the cinnamon sugar mixture.
  9. Serve warm and enjoy the fluffy, cinnamon-covered goodness.

Notes

These muffins can be stored in an airtight container for 2-3 days or frozen for up to a month.
