Soft, chewy cookies that combine the comforting flavors of classic cinnamon rolls, frosted with a sweet glaze.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar (for icing)
  • 12 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) so it’s nice and hot when your cookies are ready to go in.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just incorporated.
  6. On a lightly floured surface, roll out the dough into a rectangle, about 1/4-inch thick.
  7. Sprinkle the ground cinnamon evenly over the rolled-out dough.
  8. Starting from one edge, roll up the dough tightly into a log. Slice into cookies, about 1/2-inch thick.
  9. Bake for 10-12 minutes or until golden and set.
  10. For icing, whisk together powdered sugar and milk until smooth and drizzle over cooled cookies.

Notes

Store leftover cookies in an airtight container at room temperature for up to 5 days. You can freeze the unbaked dough for up to 3 months!
