Indulgent Churro Cheesecake Bars featuring a crisp graham cracker crust and a creamy cheesecake filling, topped with cinnamon sugar.

  • 1 cup crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1/2 cup sugar for topping
  • 1 tsp cinnamon
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking dish.
  2. Combine the crushed graham crackers with 1/4 cup of sugar and melted butter in a bowl. Press the mixture into the bottom of the greased baking dish.
  3. Beat the softened cream cheese in a separate bowl until creamy and smooth. Gradually add the powdered sugar and vanilla extract, mixing until incorporated.
  4. Stir in the sour cream and eggs, ensuring thorough integration.
  5. Pour the cheesecake mixture over the prepared crust and spread evenly. Bake for 30-35 minutes, until the center is set and slightly jiggly.
  6. Mix together 1/2 cup sugar and 1 tsp cinnamon in a small bowl for the topping.
  7. Cool the cheesecake to room temperature after baking.
  8. Sprinkle the cinnamon sugar mixture on top of the cooled cheesecake.
  9. Refrigerate the bars for at least 3 hours before cutting and serving.

Notes

Serve with vanilla ice cream or whipped cream for added indulgence. Leftovers can be stored in an airtight container for up to a week.
