  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your loaf pan.
  2. Combine the grated zucchini with sugar, vegetable oil, eggs, and vanilla in a large bowl until well mixed.
  3. Whisk together the flour, cocoa powder, baking soda, and salt in another bowl.
  4. Mix the dry ingredients into the wet mixture gradually until just combined.
  5. Fold in the chocolate chips gently.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Pairs well with whipped cream or vanilla ice cream. Store leftovers in an airtight container at room temperature for up to 3 days.
