  • 4 oz bittersweet chocolate
  • 2 tbsp unsalted butter
  • 2 large eggs, separated
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and butter individual ramekins generously.
  2. Melt the chocolate and butter together in a double boiler or microwave, stirring until creamy and smooth.
  3. Whip the egg whites with a pinch of salt until stiff peaks form.
  4. Whisk the egg yolks with sugar and vanilla until thick and pale.
  5. Fold the melted chocolate mixture into the egg yolk mixture.
  6. Gently incorporate the whipped egg whites into the chocolate mixture.
  7. Pour the mixture into the prepared ramekins, filling them about 2/3 full.
  8. Bake for 12-15 minutes until puffed and set.
  9. Serve immediately, dusted with powdered sugar if desired.

Notes

For best flavor and texture, soufflés are best served fresh out of the oven. They can be stored in the fridge for up to 2 days, but may lose their puffiness.
