  • 1/4 cup honey or maple syrup
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil (optional)

Instructions

  1. Blend the base: In a bowl, mix the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  2. Gradually add the powdered sugar to the peanut butter mixture. Mix until everything is combined.
  3. Roll the mixture into small balls, about 1 inch in diameter, and place on a baking sheet lined with parchment paper.
  4. Transfer the baking sheet to the freezer and let the peanut butter balls chill for 30 minutes.
  5. Melt the chocolate chips in a microwave or double boiler. Add coconut oil for a smooth coating.
  6. Dip each peanut butter ball into the melted chocolate, ensuring it’s fully coated, then place back onto the baking sheet.
  7. Refrigerate until the chocolate is set, about 15 minutes, before enjoying.
