Ingredients

Scale
  • 200g dark chocolate
  • 3 large eggs
  • 50g sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the chocolate by placing it in a heatproof bowl over simmering water, stirring occasionally until smooth, then let it cool slightly.
  2. Whip the egg whites in a large mixing bowl until stiff peaks form.
  3. Whip the cream, sugar, and vanilla extract in another bowl until soft peaks form.
  4. Combine the egg yolks with the cooled melted chocolate.
  5. Fold the whipped cream into the chocolate mixture gently.
  6. Fold in the beaten egg whites cautiously to maintain fluffiness.
  7. Spoon the mousse into serving dishes and chill in the fridge for at least 2 hours before serving.

Notes

For an elegant touch, serve with a dollop of whipped cream and chocolate shavings. Leftovers can be stored in the fridge for up to 3 days.
