A rich and velvety chocolate mousse cake, perfect for any occasion, with layers of decadent chocolate goodness.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 6 ounces semi-sweet chocolate, chopped
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream (for ganache)
  • 4 ounces semi-sweet chocolate (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. In a bowl, mix together the flour, cocoa powder, sugar, baking powder, and salt until well blended.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix!
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Allow the cake to cool completely in the pan.
  6. For the chocolate mousse, melt the chocolate in a double boiler over low heat. In a separate bowl, whip the heavy cream until soft peaks form, then gradually add powdered sugar.
  7. Once the chocolate is melted and slightly cooled, fold the whipped cream into the chocolate mixture until fully combined, ensuring a light and airy texture.
  8. After the cake has cooled, spread the chocolate mousse evenly over the top of the cake, creating a luscious layer.
  9. For the ganache, heat the remaining 1/4 cup of heavy cream until just boiling, then pour it over the chopped chocolate in a bowl. Stir until the chocolate is melted, creating a smooth and shiny ganache.
  10. Pour the ganache over the mousse layer, allowing it to flow over the edges.
  11. Refrigerate the completed cake for at least 4 hours before serving to allow the mousse to set perfectly.

Notes

Pairs well with vanilla ice cream, whipped cream, or fresh berries. Store in the refrigerator for up to 3 days or freeze for a longer duration.
