A rich and velvety Chocolate Mousse Cake that offers a burst of chocolate flavor with a light, airy texture.

  • 8 oz dark chocolate, chopped
  • 1/4 cup unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Begin your journey by melting the dark chocolate and unsalted butter together in a bowl set over simmering water. Stir until the mixture is smooth and glossy, then allow it to cool slightly.
  2. In a separate bowl, whisk the egg yolks and granulated sugar until they turn pale and thick. Incorporate the cooled chocolate mixture and a dash of vanilla extract for that extra flavor punch.
  3. In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. You’ll know they’re ready when you can hold the bowl upside down without any slipping!
  4. Gently fold the beaten egg whites into the chocolate mixture, being careful to retain the fluffiness. This is what will give your mousse that light and airy texture.
  5. In yet another bowl, whip the heavy cream until soft peaks form. Fold this luscious cream into the chocolate mixture, taking care not to deflate it.
  6. Pour the divine chocolate mixture into a greased cake pan and refrigerate for at least 4 hours, or until it sets beautifully.
  7. When you’re ready to serve, take the cake out of the fridge and let it rest for a few minutes. Optionally top it with whipped cream or chocolate shavings for that extra touch of elegance!

Notes

Ensure your bowls and whisk are clean when whipping egg whites; any grease can prevent them from achieving stiff peaks. Allow the mousse to chill thoroughly to set perfectly.
