A rich, velvety chocolate mousse cake that feels indulgent yet surprisingly light, perfect for celebrations.

Ingredients

  • 1 1/2 cups heavy cream
  • 8 oz bittersweet chocolate, chopped
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder (for dusting)
  • Chocolate shavings (for garnish, optional)

Instructions

  1. Melt the bittersweet chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. Prepare the egg yolks and granulated sugar together until pale and creamy. Stir in melted chocolate and vanilla extract.
  3. Whip the heavy cream to soft peaks, then gently fold it into the chocolate mixture.
  4. Beat the egg whites until stiff peaks form, then fold into the chocolate mixture.
  5. Chill the mousse mixture in a prepared cake pan for at least 4 hours or until set.
  6. Dust the top with cocoa powder and garnish with chocolate shavings before serving.

Notes

For an extra flavor, consider adding a pinch of sea salt to the chocolate mixture. Serve with whipped cream or fresh berries.
