  • 1 cup bittersweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and grease four ramekins with butter and dust with flour.
  2. Melt the butter and chocolate chips together in a double boiler or microwave, stirring until smooth.
  3. Whisk together the eggs, egg yolks, and granulated sugar until pale and fluffy.
  4. Stir the melted chocolate mixture into the egg mixture until combined.
  5. Fold in the flour and salt until just combined.
  6. Distribute the batter among the prepared ramekins, filling each about three-quarters full.
  7. Bake for 12-14 minutes until the edges are firm but the center remains soft.
  8. Let the cakes cool for 1 minute, then invert onto plates.
  9. Dust with powdered sugar if desired and serve immediately.

Notes

Best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 2 days.
