  • 1 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Sift together flour, cocoa powder, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients and mix until everything is nicely combined.
  5. Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.
  6. Roll the chilled dough into balls, ensuring even size for consistent baking.
  7. Coat each ball in powdered sugar, creating a beautiful outer layer.
  8. Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the tops are beautifully cracked and the edges are firm.
  10. Cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
