Deliciously fluffy muffins filled with warm chocolate and topped with cinnamon sugar, reminiscent of churros.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup cinnamon sugar (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, and salt.
  3. Mix the melted butter, milk, and eggs in another bowl.
  4. Combine wet and dry mixtures, stirring until just combined.
  5. Fill each muffin cup halfway with batter, add chocolate chips, then top with more batter until 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Coat the tops in cinnamon sugar after cooling slightly in the pan.
  8. Serve warm for best taste.

Notes

For extra chocolate goodness, add more chocolate chips or nuts. Store leftovers in an airtight container for up to 3 days.
