A delightful combination of soft, ripe bananas and molten chocolate chips that explode with flavor in every bite.

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas until well combined.
  4. Mix in the sugar, beaten egg, and vanilla extract until smooth.
  5. Sprinkle the baking soda and salt over the mixture, and stir well.
  6. Mix in the all-purpose flour until just incorporated. Fold in the chocolate chips gently.
  7. Pour the batter into the prepared loaf pan, smoothing the top as needed.
  8. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use overripe bananas for the best sweetness. Don’t overmix to ensure a tender loaf.
