A rich and creamy chocolate cheesecake that brings joy and indulgence to any occasion.

  • 1 1/2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 8 ounces semisweet chocolate, melted

Instructions

  1. Preheat your oven to 325°F (163°C). In a medium bowl, combine chocolate cookie crumbs and melted butter until well combined. Press mixture into the bottom of a 9-inch springform pan.
  2. Beat the cream cheese, sugar, and vanilla extract in a large bowl until smooth.
  3. Add sour cream to the cream cheese mixture and mix until everything is incorporated.
  4. Gradually add eggs one at a time, mixing until just combined. Be careful not to overmix.
  5. Stir in the melted chocolate until smooth and fully blended into the mixture.
  6. Pour the creamy filling over the crust in the springform pan, spreading it out evenly.
  7. Bake for about 60-70 minutes, or until the center is set but still has a slight jiggle.
  8. Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour.
  9. Refrigerate for at least 4 hours or overnight before serving to let it firm up beautifully.

Notes

Garnish with fresh berries or a drizzle of caramel for added flavor. Store in the refrigerator for up to one week.
