A delightful union of cookies and brownies, these Chocolate Brookies feature a soft chocolate chip cookie atop a rich, fudgy brownie.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup brownie batter (pre-made or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking pan.
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually add to the wet ingredients.
  5. Fold in the chocolate chips gently into the cookie dough.
  6. Pour the brownie batter into the bottom of the greased pan and spread evenly.
  7. Spoon the cookie dough over the brownie batter and spread for coverage.
  8. Bake for 25 to 30 minutes, until edges are set.
  9. Cool in the pan before cutting into squares.

Notes

Serve warm with a scoop of vanilla ice cream or a glass of cold milk. Store in an airtight container for up to 3 days at room temperature or a week in the fridge.
