  • 2 pounds chicken thighs
  • 1/4 cup honey
  • 2 tablespoons chipotle in adobo sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Juice of 1 lime
  • Chopped cilantro for garnishing

Instructions

  1. Mix honey, chipotle in adobo sauce, olive oil, garlic, cumin, lime juice, salt, and pepper in a bowl to create the marinade.
  2. Coat chicken thighs generously with the marinade and let it sit for at least 1 hour, preferably overnight.
  3. Preheat your grill or oven to medium-high heat.
  4. Cook chicken thighs for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  5. Remove chicken from heat and let it rest for a few minutes.
  6. Garnish with chopped cilantro before serving.
