Juicy skirt steak skewers marinated in zesty chimichurri sauce, perfect for summer gatherings.

  • 1 pound skirt steak, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1 teaspoon red pepper flakes
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh oregano, chopped
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Prepare the Chimichurri Sauce: In a bowl, mix together olive oil, minced garlic, red wine vinegar, red pepper flakes, chopped parsley, chopped oregano, salt, and pepper.
  2. Marinate the Steak: Take half of your chimichurri sauce and coat the skirt steak pieces. Cover the bowl and let it marinate for at least 30 minutes.
  3. Preheat the Grill: Heat your grill to medium-high heat to ensure even cooking.
  4. Assemble the Skewers: Thread the marinated steak pieces onto your skewers, leaving space between each piece.
  5. Grill to Perfection: Cook the skewers for about 8-10 minutes, turning occasionally for even browning.
  6. Serve with Extra Chimichurri: Drizzle the remaining chimichurri sauce over the skewers before serving.

Notes

Pairs well with grilled vegetables or fresh salad. If you have leftovers, store in an airtight container in the refrigerator for up to 3 days.
