  • 1 cup yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (400g) diced tomatoes
  • 1 cup heavy cream
  • Fresh cilantro for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine the yogurt, lemon juice, cumin, coriander, garam masala, turmeric, chili powder, and salt. Add the chicken pieces and give it a gentle mix until they are well-coated in the marinade. Let it marinate for at least 1 hour, or even overnight if you’re planning ahead.
  2. Sauté the Aromatics: Heat the vegetable oil in a pan over medium heat. Once hot, add the finely chopped onions and sauté until golden brown—this should take about 5-7 minutes. Then, stir in the minced garlic and grated ginger, cooking for an additional minute.
  3. Brown the Chicken: Add the marinated chicken into the pan. Stir it in and cook until the chicken is nicely browned.
  4. Simmer with Tomatoes: Add the can of diced tomatoes to the pan and stir well. Allow this mixture to simmer for 10-15 minutes.
  5. Creamy Finish: Stir in the heavy cream and let it simmer for an additional 5 minutes. Garnish with fresh cilantro before serving.

Notes
