Crispy, golden Chicken Taquitos filled with flavorful shredded chicken, cheese, and vegetables—a perfect quick dinner or crowd-pleasing snack.

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 10 corn tortillas
  • Oil for frying

Instructions

  1. Combine the filling: In a bowl, combine the shredded chicken, cheese, onions, tomatoes, garlic powder, chili powder, salt, and pepper. Mix everything until well-combined.
  2. Heat the tortillas: Heat the tortillas in a skillet over medium heat for a few seconds on each side until they’re pliable.
  3. Assemble the taquitos: Spoon a portion of the chicken mixture onto each tortilla. Roll them tightly.
  4. Heat the oil: In a frying pan, heat oil over medium heat until hot.
  5. Fry the taquitos: Carefully place the rolled taquitos in the hot oil. Fry them for 2-3 minutes on each side until golden brown and crispy.
  6. Drain and serve: Remove the taquitos from the oil and drain on paper towels. Serve warm with salsa or sour cream.

Notes

For extra flavor, customize your filling with black beans, corn, or bell peppers. Bake instead of fry for a lighter option.
