Ingredients

  • Chicken breast
  • Bell peppers
  • Broccoli
  • Carrots
  • Soy sauce
  • Ginger
  • Garlic
  • Olive oil
  • Salt
  • Pepper
  • Rice or noodles

Instructions

  1. Prepare the Chicken: Cut the chicken breast into bite-sized pieces, ensuring uniformity for even cooking.
  2. Heat the Olive Oil: Heat olive oil in a large pan over medium-high heat until it shimmers, ready to embrace the chicken pieces.
  3. Cook the Chicken: Add the chicken pieces to the pan, ensuring not to overcrowd them. Cook until they turn golden brown and are cooked through, about 5-7 minutes.
  4. Set Aside the Chicken: Once cooked, remove the chicken from the pan and set aside. It’ll return soon to the vibrant party of vegetables!
  5. Sauté Garlic and Ginger: In the same pan, if needed, add a bit more olive oil. Sauté the chopped garlic and ginger until fragrant, about 30 seconds.
  6. Stir-Fry the Vegetables: Add the chopped bell peppers, broccoli, and carrots to the pan. Stir-fry until they’re tender-crisp, keeping their vibrant colors.
  7. Return the Chicken: Return the cooked chicken to the pan, mixing it with the sautéed veggies.
  8. Season and Combine: Pour in the soy sauce, and season with salt and pepper. Cook for another 2-3 minutes, stirring constantly to ensure every piece is coated.
  9. Serve: Serve the delightful stir-fry over fluffy rice or noodles.

Notes

For an extra touch, sprinkle sesame seeds on top or garnish with chopped green onions. Leftovers can be stored in an airtight container for 3-4 days.
