  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pan over medium heat until shimmering.
  2. Add minced garlic and ginger, sautéing until fragrant, about 30 seconds.
  3. Cook the sliced chicken until no longer pink in the center, about 5-7 minutes, stirring occasionally.
  4. Toss in the mixed vegetables, stir-frying for about 5-7 minutes until vibrant and tender-crisp.
  5. Pour in the soy sauce, mixing until all ingredients are coated.
  6. Season to taste with salt and pepper, adjusting according to preference.
  7. Serve hot over rice or noodles, finishing with sesame seeds or chopped scallions.
