  • 8 slices of prosciutto
  • 8 fresh sage leaves
  • 1 cup all-purpose flour
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup white wine

Instructions

  1. Prepare the Chicken with Sage & Prosciutto: Place a sage leaf on each piece of chicken and top with a slice of prosciutto. Secure with toothpicks to ensure the flavors meld during cooking.
  2. Dredge the Chicken: Dredge each piece of chicken in flour, shaking off the excess. This creates a lovely golden crust once cooked.
  3. Heat the Oil and Butter: In a skillet over medium heat, combine the olive oil and butter. This mixture creates a rich base for frying and adds flavor.
  4. Sear the Chicken: Carefully place the chicken in the skillet. Cook each piece for 4-5 minutes on each side until golden brown and cooked through.
  5. Deglaze the Pan: Remove the chicken from the skillet. Pour in the white wine to deglaze the pan, scraping up any browned bits—this is where the magic happens!
