Deliciously crispy chicken quesadillas filled with savory chicken, vibrant bell peppers, and melted cheese, perfect for a quick weeknight meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cheese (cheddar or Monterey Jack), shredded
  • 4 large flour tortillas
  • 1 cup bell peppers, sliced
  • 1/2 cup onions, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Sauté the bell peppers and onions until soft, about 5 minutes.
  3. Season the shredded chicken with salt and pepper.
  4. Assemble the quesadilla by layering seasoned chicken, sautéed veggies, and cheese on one half of a tortilla.
  5. Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
  6. Repeat with the remaining tortillas.
  7. Cut the quesadillas into wedges and serve with sour cream and salsa.

Notes

Leftover quesadillas can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet for the best texture.
