A classic Italian dish featuring tender chicken breasts in a zesty lemon and caper sauce.

Ingredients

  • 4 chicken breasts
  • 1/2 cup flour
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/4 cup lemon juice
  • 2 tablespoons capers
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper before dredging them in flour.
  2. Heat olive oil in a skillet over medium heat; cook the chicken until golden brown, about 5-7 minutes on each side.
  3. Remove the chicken from the pan and set aside; add butter and garlic to the same pan.
  4. Add lemon juice and capers to the pan, scraping up any browned bits from the bottom.
  5. Return the chicken to the pan, spooning the sauce over it; let it simmer for a few minutes.
  6. Garnish with fresh parsley before serving.

Notes

Serve over angel hair pasta or alongside an arugula salad. Great with a chilled Pinot Grigio.
