A comforting and quick Chicken Lo Mein filled with tender chicken, colorful vegetables, and tossed in savory sauces.

Ingredients

  • 8 ounces lo mein noodles
  • 1 tablespoon vegetable oil
  • 1 pound chicken breast, thinly sliced
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes.
  3. Add the mixed vegetables and garlic, and stir-fry for another 3-4 minutes until the vegetables are just tender.
  4. Stir in the cooked noodles, soy sauce, oyster sauce, and sesame oil. Toss everything together until evenly coated and heated through.
  5. Season with salt and pepper to taste. Garnish with chopped green onions before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat.
