A simple spin on traditional chicken gyros with smoky, tender chicken, fresh vegetables, and creamy tzatziki sauce, perfect for a quick weeknight dinner.

  • 1 pound boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Pita bread
  • Sliced cucumbers
  • 1 tomato, diced
  • Red onion, thinly sliced
  • Tzatziki sauce

Instructions

  1. Prepare the Marinade: In a bowl, combine 3 tablespoons of olive oil, 2 cloves of minced garlic, 1 tablespoon of dried oregano, 1 teaspoon of ground cumin, and a pinch of salt and pepper.
  2. Marinate the Chicken: Add the 1 pound of boneless, skinless chicken thighs to the bowl. Ensure every piece is well-coated in the flavorful marinade. Let it chill in the fridge for at least 30 minutes.
  3. Grill the Chicken: Cook the marinated chicken for 6-8 minutes on each side over medium heat.
  4. Slice the Chicken: Let the chicken rest for a minute before slicing it into juicy strips.
  5. Warm the Pita: Heat pita bread in a skillet for a minute on each side or microwave in a damp paper towel for 15-20 seconds.
  6. Assemble the Gyros: Layer the warm pita with sliced chicken, cucumbers, diced tomatoes, thinly sliced red onions, and tzatziki sauce.

Notes

Marinate overnight for deeper flavor. Use a grill pan for beautiful grill marks. Customize with your favorite toppings!
