A classic Italian dish featuring tender, crispy chicken breasts in a luscious lemony sauce, perfect for any occasion.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 1 lemon, juiced
  • 1/4 cup unsalted butter
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Dredge each seasoned chicken breast in flour, shaking off any excess.
  3. Beat the eggs until well combined.
  4. Heat the unsalted butter in a skillet over medium heat.
  5. Dip each chicken breast into the beaten eggs and place them in the skillet. Cook until golden brown, about 4-5 minutes per side.
  6. Remove the chicken from the skillet and set aside on a plate.
  7. Deglaze the skillet by adding the white wine and chicken broth, scraping up the browned bits.
  8. Incorporate the lemon juice, stirring to combine.
  9. Return the chicken to the skillet, soaking it in the sauce.
  10. Simmer for 10 minutes to meld flavors.
  11. Garnish with fresh parsley before serving.
