Delicious homemade Chicken Enchiladas filled with tender shredded chicken, fragrant spices, and gooey cheese.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1/2 cup diced onions
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté onions in olive oil until soft.
  3. Mix in chicken, cumin, chili powder, salt, and pepper.
  4. Fill each tortilla with the chicken mixture and cheese, then roll and place seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.
  7. Serve hot with sour cream on the side.

Notes

For extra flavor, marinate chicken ahead of time. Corn tortillas can be used instead of flour.
