A delightful Chicken Caprese Panini featuring juicy grilled chicken, fresh basil, mozzarella, and ripe tomatoes on crispy ciabatta.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 slices of mozzarella cheese
  • Fresh basil leaves
  • 2 ciabatta rolls or panini bread
  • Tomato slices
  • Balsamic glaze
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or panini press to get it nice and hot.
  2. Season the chicken breasts generously with salt and pepper.
  3. Grill the seasoned chicken breasts until cooked through, about 6-7 minutes on each side.
  4. Slice the cooked chicken into tender pieces.
  5. Prepare the ciabatta rolls by slicing in half and drizzling with olive oil.
  6. Assemble the panini starting with mozzarella cheese, sliced chicken, basil leaves, and tomato slices.
  7. Add balsamic glaze over the ingredients, then top with the other half of the roll.
  8. Grill the sandwiches until the bread is golden brown and the cheese has melted, about 3-5 minutes.
  9. Slice the panini in half and serve warm.

Notes

Pair with a light salad or grilled vegetables. Store any ungrilled sandwiches in an airtight container for up to 2 days.
