Cherry Pie Bars are a delightful, easy-to-serve treat featuring a buttery crumbly base and vibrant cherry filling, reminiscent of homemade cherry pie.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling
  • 1 teaspoon cornstarch
  • 1/2 teaspoon almond extract (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine the flour, sugar, melted butter, salt, and vanilla extract in a bowl until crumbly.
  3. Press half of the crumbly mixture into the bottom of the prepared pan.
  4. Mix the cherry pie filling with cornstarch and almond extract (if using) in another bowl and spread it over the crust.
  5. Sprinkle the remaining crumb mixture over the cherry filling generously.
  6. Bake for 30-35 minutes, until the top is golden brown.
  7. Allow the bars to cool in the pan before dusting with powdered sugar and cutting into bars.

Notes

Pairs well with vanilla ice cream or whipped cream. Store leftovers in an airtight container.
