Delicious Cherry Pie Bars that capture the essence of cherry pie in an easy, portable format.

  • 1 cup (226 grams) unsalted butter, softened
  • 1¾ cups (350 grams) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 3 cups (360 grams) all-purpose flour
  • 2 cans (21 ounces each) cherry pie filling

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easier removal and cleanup.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2–3 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extract if using.
  4. Incorporate the flour gradually, mixing until a thick, soft dough forms.
  5. Spread about two-thirds of the dough evenly into the bottom of the prepared pan.
  6. Add the cherry pie filling evenly over the dough, spreading it gently to the edges.
  7. Top with small spoonfuls of the remaining dough, leaving some cherry filling visible.
  8. Bake for 35 to 40 minutes, until the top is lightly golden.
  9. Cool completely in the pan for at least 1 hour before slicing into squares.

Notes

Serve with vanilla ice cream or whipped cream. Can be stored in an airtight container for up to 3 days at room temperature.
